  4. U must soak overnite, then rinse & return to pot. Fill w fresh water a couple inches over the lupini beans. Cook 45 minutes. Cool, rinse & put the lupini in mason jars or other glass jars, fill with water & 1 teas. salt. Put in frig. Everyday for a week drain, rinse beans, refill jar w/beans, fresh water to cover & salt. This is the way you remove the bitterness.
    If desired, you can add a clove of peeled garlic for flavor to the jar while you are brining the beans. They are a great snack and will keep in the frig for a couple weeks if you change the water everyday. (Don’t forget to pop them out of the shell before you eat them)
